Nederlandse sterrenchef Richard Ekkebus is culinair directeur van restaurant Amber in vijfsterren hotel ‘The Landmark Mandarin Oriental’ in Hongkong.

Yes, those are sprouts!

I'm not sure if it will be good or not but like the fact that at least KL shows photos of their food on their onboard crockery - so 'in situation'. So at least no disappointment, it doesn't look too pretty but it is probably close to what you get, unlike AF which features photos of restaurant plated dish before serving you canteen burnt mush (whether good tasting or not, it invariably looks ugly).

The cod is main, the salmon appetizer.

Hated them as a child but actually got to like them.

Some pictures and opinions from the actual dishes onboard can be found in this trip report from KnightofMalta.
And Ekkebus' presentation of the meals in this YouTube movie.

I had these a couple of days ago.

Overall I was extremely impressed. My home airline is BA and their J food is legendarily bad, but I felt KLM's offering was comparable to solid J offerings in Cathay for example (maybe not quite Etihad).

Positives:
- Everything fresh, well cooked
- Looks attractive, nicely plated
- Broodje crocket!

Negatives:
- No choice in starter. Fine for me, but it seems a bit limiting
- 2 of three mains had brussel sprouts in them
