This will be my first time flying JetBlue, so bear with me...

Am I totally missing something or can you not select your seats after booking a flight on JetBlue? My mom made me a reservation from LGB to OAK (for the low low price of $57), but I can't ficure out how to go back and pull an itinerary up. Is this something just not offered on JetBlue?

At this time, it's not possible to go back and reserve a seat once the screen after reservation is passed. You may however, call 800-JETBLUE and they will be happy to get a seat assignment for your mother. A limited number of seats are held for airport check-in in case the flight is showing full as well.
