If you insert the card into the reader, it's very likely to ask for a signature as US cards don't have PINs for purchases.

For Smart Ex tickets. You can wait to add a physical IC card number to the Smart Ex associated ticket anytime before boarding the train. Would need some yen on the card if you want to use physical Suica to enter from or transfer to other JR lines from Shinkansen, otherwise just use to exit to station and reenter JR with mobile Suica.

I haven't used Suica, but I added the Passmo to my apple pay and when adding funds through the Apple Wallet it was pretty much instantaneous
