There is certainly the best concentration of the original castles (though none to rival Himeji) as well as an incredible landscape. Some of the places i enjoyed most were Matusyama and Kotahira (ok, i can't resist anything that goes uphill, even if there are steps;-)

Oh, and to add, the Udon are indeed quite nice (and in fact a live saviour, if you travel with a daughter who does not seem to enjoy japanese food that much except for udon;-)

Wanted to report back about my trip a little. I will preface this by saying in my other two trips to Japan, it has rained at least 70% of the time. However with this trip the most that happened was it got partly cloudy. The weather was outstanding and this has been by far my favorite trip, albeit short, that I have made thus far.

I spent a day in Tokyo, a day in Yokohama, 3 days in Okayama, and about a day worth of trains between Tokyo-Okayama-Tokyo. From Okayama, I ended up following the advice given in this thread and visited Korakuen, Ritsurin, and Kurashiki.

Highlight of my trip: Ritsurin. WOW that place is amazing. I visited Korakuen first and that set the bar pretty high on its own. But then the next day I went and visited Ritsurin and that place just blew anything else I saw out of the water.

Biggest surprise: Yokohama. I went in with pretty low expectations, but i have to say the city was pretty interesting. I was planning on staying in Tokyo but booking so late, every hotel that I trust booking was completely sold out or was quoting 1000+ for the night (Saturday night). Apparently there was an AKB-48 Concert that I only found out once it started, I totally would have gone if I knew beforehand and there were tickets still available. I tried to buy tickets for a different show but that one was also sold out :(. It also seems in general getting concert tickets in Japan is a massive pain.

Wouldn't do again: The ferry between Takamatsu and Uno. Unless you want to have a blast from the past, like circa 1970 I don't think it was worth it. The port was a bit of a pain to find and took a while to physically get there. Buying a ticket was also difficult if you don't speak or read Japanese at all.

Overall I had an amazing trip, thanks to all of the input that I got. Picked up a pair of Momotaro jeans in Okayama. I didn't think they would have my size since no store in Japan seems to carry anything above a medium, but surprisingly they had my size. I wish I had more time to explore Shikoku, but perhaps another time when I have more time.
