I want to book GVA-MLE for Feb next year with Emirates. Should I book now, or wait for October 1st when new schedules come out? Do prices usually increase or decrease ?

Usually fares will decrease until 2-4 weeks prior to departure; then often you see a significant increase in fare until departure. Last minute fares are almost always expensive.
If you buy very far out you pay a premium and cut yourself out from any promo fares later. There is no reason to buy tickets for February now unless you already researched that the fares are at their lowest low (when comparing with other travel dates)

Different airlines use different mechanisms. E.g. KL starts cheap and typically increases fares as more seats are sold. Not sure about EK but I suspect it is like SK AAR explains - with prices starting high 12 months out - going down at 3-6 months and back up 2-6 weeks before. But some destinations/dates (MLE during Feb break?) Could show a different pattern. Hopper and Google Flights can maybe give some insights in what to expect.
