Is it possible to still book this kind of trip from the US to Europe? IF so how and where?

Most airline websites will allow you to choose the class per segment. United makes this very simple. Just perform a standard economy fare search and they will automatically include PE and J into the search results as options. You can mix and match as you see fit. Also note that there may be a significant fare depending on which segment is in J and Y for the same dates/flights (J on east flight and Y on west flight may be cheaper than Y on east flight and J on west flight). Kayak also allows you to select the class for each segment.

Almost every airline’s website allows you to do this.

Be sure to compare the mixed cabin class fares to the cost of a deeply discounted RT business class fare purchased from the airline. Sometimes fare combinability requirements can push you into a higher fare class so that you might find that business class all the way doesn't cost much more or can be even cheaper.

As others have noted, use each airline's website. And, as MSPeconomist pointed out, combining different types of fare classes can drive the rate that you pay for the combined round trip ticket. Many airlines now have no penalty for flying two separate one-way tickets so purchasing each one-way ticket separately may be a better approach in terms of achieving the lowest possible total cost.
