what major routes fly through MIA regioin at full altitude?
 
Major, as in, multiple times daily.
SJU-DFW ?
Any others when weather doesn't divert?
Is there online radar showing these flyovers in real time?

While I'm not sure what you mean by "full altitude", you can find major low and high altitude routes on published navigation charts:

https://www.faa.gov/air_traffic/flig.../highaltitude/

You can also go to a site such as flightradar24.com and see real-time air traffic movement if you're curious what's out and about at any given time.
