What specifically are you worried about? Short haul? Long haul?
You can pre-order your meal ex-Madrid on long hauls. A flight attendant will also come around to take your order shortly after take-off.
I can't recall noticing a precise order of service.

In my experience, yes meal service is always front to back. That said, there's some variation in how meal orders are taken; generally by the CSD one aisle at a time but others by the FAs working the aisle.
