No pictures but MAD-LAX salmon tartare/ baked cod /chocolate cake/ lemon ice cream was great and I’m not a huge cod fan. The cake said Do&Co, does Iberia use them for all J flights?

Yes, Do&Co are Iberia's caterers. Fairly sure they do longhaul Y and W catering too in addition to all J.

How long have they been the caterers? Food seemed much better than last year.

They were in charge last year too. They've been with Iberia since 2020, according to the press release linked a few posts up.

Last night's dinner to GVA:

Sardine was beautifully briny. Chicken tasty but on the dry side unfortunately, unlike my previous chicken experience.

Had fruit and yoghurt in the BA Lounge so skipped Iberia's sorry excuse for euroJ breakfast.

What is this ‘usual routine’ please?

The FAs either serve you the food still sealed, or only break the seal in front of you. I told them they could unseal the food in the galley but they still followed procedure.
