When will my double nights post?
It depends.
From the promotion FAQ :
In reality bonus Tier-Qualifying Nights have been posting earlier (and more regularly) than this. They have been posting in batches, so the nights will be credited independently from your stay credits and will show up in your account activity as "Bonus Journeys Bonus Night" once they do post.
For stays completed in 2020 and in the first days of 2021, the bonus nights posted on 1/7/21. There was another Bonus Night posting batch on 1/20/21 and 1/22/21. Some blogs reported earlier this year that posting would be done in batches every two weeks - and this (roughly) lines up with what we've seen so far.

If you haven't yet received your bonus nights then there's not much that Hyatt will do to "fix" this for you since the official line is that the bonuses won't post until 2-3 weeks after the promotion end date (i.e. 2/28/21).

I also booked 3 nights yesterday with a check out Mar 1.
I also did Chase Offers for 10% of Hyatt for airport hotel stay and $60 off $300 Hyatt on Amex Offers (ends Mar 15).
Citi Prestige was 4th Night Free.

For the 3 nights with checkout on March 1st, none of the 3 nights will be eligible for the current Bonus Journeys promotion (extra points earning or double nights) since you’re checking out after the end of the promotion.

Checking out on Mar. 1 may be the worst case scenario. Current Bonus Journey double elite nights and triple points requires checking out on Feb. 28. New promotion starts on Mar. 1. So checking out on Mar. 1 means entire 3 nights do no qualify for any promotion.
If possible, check out on Feb. and figure out options for night of Feb. 28.

2020 was a pandemic year and will likely be the worst one in most of our lives...will happily trade less generous promos going forward for Hyatt continuing to be best in class for loyalty rewarding and for existing as is (and not merging w/Wyndham or being absorbed by the Marriott Borg).
I'm a bit mystified at some of the "but this next promo isn't as good!" posts...GMAB people.

It's also my past experience that you must check out before the promotion ends to count. The official T&C are not on Hyatt's website anymore, but millionmilesecrets.com lists one of the terms as:
- Your stay must be completed by Feb. 28, 2021

On the Q2 promo, it says "nights" not "stay" so it's a tad different. Either way, I'm not risking it.

This was promo one of two once-in-a-lifetime events (the other being the ability to work remotely from a hotel room, which would have never been possible without such a pandemic) that was necessary to make me a Globalist (with yet another assist from the extra nights that came from my newly converted World of Hyatt credit card).
I look forward to slugging it out for benefits with all my newly minted brethren over the next 24 months!

Check out today if you can and get double credit and triple points. Move elsewhere for 1 night and return. It's worth it

Will the nights count towards the new promo if I don’t checkout?
im already at 120 nights this year so I don’t really care about the double nights promo.
I do care about the triple points, but if all the nights count towards the new promo I think I am slightly better off with 1250 bonus per night than triple points
