Paid stays are 10%+ cheaper if booked as an SLH member on its website. It, also, includes continental breakfast. (note from @59impala. I paid a 30% premium for The Plymouth Southbeach.) (antonius66 I observed 10-30% premiums for 2 hotels in Portugal over SLH direct, closer to 50% over OTAs)
A limited number of reviews of SLH properties may be found in the Other Hotel Chains Forum.
World of Hyatt members can earn 5 Base Points for every $1 USD spent on qualifying room rates and can redeem points for free nights at participating SLH hotels. It doesn't stop there, members can also enjoy exclusive in-hotel benefits when staying at a participating SLH hotel.

List of participating properties?

There is an SLH hotel that I want to stay at that isn't showing up in a Hyatt search. Is this partnership limited to only certain SLH properties? Are more being added as time goes on?

I have a trip to Malta in August. Casa Ellul in Valetta is part of SLH... and there is no Hyatt in Malta. I would definitely stay there for the qual nights if the rate was reasonable... I'm wondering if I should wait and see if it gets added before I book anything

They are adding SLH properties to Hyatt in waves. You should indeed wait and check back every few weeks to see what are recent additions to Hyatt. I am in the same situation as you for a couple of SLHs in Norway - looking to stay in August but they are still not included in Hyatt.

Tokyo Gajoen is gone now so That’s worst news. The Hyatt site for it is removed as well.

I was able to call in to get a night booked. With that said my reservations wont show a hotel name or any details and the app is blank as well, Everything on the hotel is not visible customer facing.

Some SLH hotels already no longer part of WoH. Was planning Zanzibar in January, the SLH hotel is now gone...
wonder what the reasons are...

Are all SLHs supposed to join Hyatt at some point, or does each property have the right to remain out if they assess it's not in their best interest?

not that I am aware of. My understanding is, that the individual hotel can chose to participate.

That is my understanding, too. Maybe the hotel expected more revenue, or they did not meet certain WoH requirements?
I'm longing for the Mauritius hotels to join, but it's never sure they will, and if they join, and I then plan (and maybe even book), they may suddenly no longer be part of WoH.
In a way, there should be some sort of minimum advance notice, say 12 months until a hotel exits again.

At the very least, they should honour points reservations already made, if they suddenly exit.

Either the property has not loaded rates past October or property will be closed for winter. My guess is the former.
