Where to get dinner during an 8 hour layover?

So I'm landing in HKG at 630PM on a Fri in Feb. My flight out of HKG is at 2AM. Having been to HK multiple times before, I figured instead of exploring the city, I'd head in for some dinner instead.

Some ideas:
One Dim Sum: Open late and cheap
Xiao Long Bao: Plenty of places to get, just have to decide where
Michelin Star?: Not trying to spend a fortune, already been to Tim Ho Wan, but maybe somewhere unique I could try.

Any other ideas for under $50 USD? Maybe something decent on Lantau Island to keep travel time/cost down?

Only open until 10 PM but good food at a reasonable price is Din Tai Fung.

- Din Tai Fung HK -

They have 4 branches in HK.

One of my favorites, but was thinking of trying something new. Knowing me though, I'll just end up there anyway as usual.

I'm very partial to One Dim Sum, though the journey from HKG to that part of town is rather cumbersome.

If you land on-time at 6:30pm and have a quick time through immigration, you're probably there at 8pm. Assume with a wait the whole visit takes two hours, so you leave at 10pm and you're back in the terminal sometime after 11pm. Doable but a lot of time in transit for dim sum.

I might try to find something closer to Hong Kong or Kowloon station. Maybe head to Hong Kong station, grab a beer at The Beer Bay, roast goose for dinner at Yat Lok, a cocktail at Employees Only in LKF and then back to the airport.

Have the lines gone down at Din Tai Fung? One of the problems of really famous places in HK now is their over-popularity, especially with increased tourism from the Mainland.

Thanks for the recommendations all. Likely going to stay in the airport now as a friend flying CX F on the mistake fare is going to be in HK the exact same time as me, so I'll be setting up camp in one of the F lounges instead.
