Transit time through HKIA : separate airlines

Hello,

I have been through HKG many times but usually under the same PNR or with a long layover. On my next trip I will be looking at an arrival on CX a 5:15am and I would like to book an onward ticket on SQ departing at 8:00am. I will have checked bags. As I understand it, I will need to cross immigration/customs, pick up my bag, re-check-in and pass security. I have the HK E-Channel on my passport. Is this 2h45min window enough time, or should I just book a later flight?

Not if your bags can check through. But it is fine to assume this is the worst case scenario.

Doable. As you can image - the problem is not immigration/customs, but baggage delivery. As soon as there is no major delay, my estimate is you should be able to get back in airside within a hour after your initial arrival.

Your only issue is the baggage delivery to the carousel.

The early morning bank of CX arrival's baggage delivery does not run at the same speed as the rest of HK.

Cathay will check your bags through. You will not need to go landside and collect them.

Yes. Basically all non-LCC carriers are interline partners; certainly all the major airlines.
