Where will you be in March? If not HK, then I'm not sure whether you can activate it elsewhere. Certainly will be a problem if, like me, there's some difficulty connecting and you have to visit a HK Unicom store to fix it.
But since the monthly fee is assessed on a calendar month basis, you will save HK$6 if you wait tiil March.

Assuming you're still in HK, I'd activate it now: it's just HK$6 activating it a month early. Not only would that give you a chance to iron out any difficulties, but remember you don't get your phone numbers until the phone's been activated. You might want to give contacts in China your number, book hotel rooms with that number, etc.
Also, if you'll be using data, make sure you've got recharging under control. Data can run through your balance quickly.

These types of SIMs are available from CU online for a decent discount. Is it possible to deliver to HKG for pickup upon arrival (airside)?

So far as I know, the cards sold directly by Unicom no longer include a Mainland number, only a HK number.
Note carefully the expiration provisions: unless you have topped up, the Unicom cards expire after 90 days EVEN IF YOU HAVE A BALANCE ON THE CARD. Unicom will neither refund the balance nor re-activate the card after it expires. (In my experience, China Mobile HK will re-activate an expired number, within a reasonable time after it's expired.)

I'm looking to buy a sim card while in HK, to use in China for only 3 days.
Don't need airtime, data only.
I think this one for $88 / 1GB might be my best option?

But the one she bought is $78 and 3 days. Something about 20 minutes included, etc.
Data is apparently unlimited for all 3 days. Not 500mb or whatever.
Anyone know if I will still need to subscribe to a data package? If so, how much is it? Will I run into problems of the $18 monthly fee and making my balance negative like a few other members did few pages back?
