If I book an Executive room for $$ for one night...
And then use points for the other two nights, what's the likelihood that I'll get moved to a regular King room on the 2nd night? I'm only Gold. This is for the Hilton Stadpark Vienna. It would be a Sunday-Wednesday stay.

There is no guarantee that you will achieve what you want. Then again, you might.
Of necessity you will have two separate reservations (one award and one paid). You can request either reservations or the hotel to link the two reeservations and hope for the best.
I would be inclined to write to the hotel.
