Additional Guest Status for Breakfast
My friend had HH status when we made a 5 nights for 4 points booking in his name at the Waldorf Maldives. My friend has since lost his HH status.
I’m listed as an Additional Guest in the room. If I hold HH Gold status, will we both get the free breakfast Gold benefit even though the reservation is not in my name as I’m staying in the same room?
If not, is it possible to change a points booking from his name / HH profile to mine? (I’m assuming no)

A reservation will always be attached to the Hilton Honors account from which the points were used. Even if you change it to your name it'll still be your friend's number/status.

Firstly, some properties will grant the breakfast upon production of evidence of a registered additional guest's status. However I wouldn't count on the Waldorf Maldives doing this.
You can easily transfer points between Hilton accounts provided you haven't reached the annual limit. So if you wanted you could cancel, pool the points then rebook under your account.
The only issue would be that if there is no more points availability, cancelling the existing reservation does not guarantee that the rooms will become available to redeem again. And even if there is availability, if someone has sufficient points, I would rebook prior to cancelling the original reservation.
Furthermore,
I have convinced properties to alter the HH number attached to the reservation, when the points came from someone else's account but the reservation was in my name (not additional guest), which resulted in being granted the status benefits. But other properties refused to do this. With points pooling it should rarely be necessary nowadays.
