A great little picturesque city not far from Hamburg is Lunenburg or Lüneburg. Easy day trip, and very pretty.

And if you like the outdoors, and the weather cooperates (big 'if'), then a walk in the unique Lunenburg Heath is also interesting. However, you would likely need a car to get there easily.

LLB--I highly recommend Schlesweg with a day trip to Flensburg. Also, Wismar is worth a visit. Schleswig has a number of excellent museums.
