JFK-TPE goes into the polar region for almost 3/4 of the flight...not surprised at all.

By YTO, I assume you mean YYZ. The WiFi is supposed to be ok except over the polar regions. However, my past experience with the WiFi on JFK-TPE and back has been horrible and would not expect a change for flights to YYZ.

Seems to depend on factors beyond anyone's control.

I've had flights where the wifi was pretty fast for browsing (including images), and I've had flights where even text barely loads. Probably depends on how many other passengers are using it, and weather conditions.

What about online gaming, like say, playing Fortnite on Nintendo Switch or smartphone?

Unless you are just downloading levels or maps, wifi on planes have very high lattency, so terrible for any online gaming experience.
