Hi...I did a test booking on etihad.com, and the rules---posted separately for outbound and return---both specify a cancellation fee of US$500. Does anyone know if that means the fee is $1000 to cancel the entire ticket?

Other airlines additionally specify a maximum cancellation fee for the entire ticket (for example they will say 'cancellation fee $625...maximum cancellation fee for entire ticket $625'); but EY does not. Here is the relevant (edited) text posted for both outbound and return:
Fare Basis: WPR21DUS
PENALTIES
CHANGES ANY TIME CHARGE USD 300.00 FOR REISSUE/REVALIDATION...
CANCELLATIONS ANY TIME CHARGE USD 500.00 FOR CANCEL/REFUND.

Should be 500 USD for the entire ticket, the same system is used by many other airlines so far. Since you can combine different fare classes outbound and inbound having different penalties, these are specified per each route. Anyway in case of cancellation always applies the highest penalty fee. For your case no difference as for both legs apply the same fare class and penalty.

Also check if a slightly more expensive ticket has a lower cancel/change fee - as the increase might be worth it.
