Question
All,
I am planning to fly from Houston to Dubai on 26th June and return on 6th July. I checked the fares online and it costs about $1505. I got an email from Emirates today about special fares to Delhi for $1168 and those flights are still via Dubai. Suppose if I buy my ticket from IAH-DXB-DEL-DXB-IAH is it possible to use only IAH-DXB-IAH?

The only way that is possible would be if you flew
HOU-DXB-DEL-DXB (stopover) - HOU
if the fare allows a DXB stopover that is
but it would also involve an Indian visa
If you missed the DXB-DEL-DXB segments, your return would be canceled

yup thats true, if you miss the dxb-del-dxb, your return would indeed be cancelled.
you could possibly take continental from hou-lon then hop onto an emirates flight around 350 rtn lon-dxb-lon
