Passport number
 
My passport has to be renewed but I want to book my tickets already. Can I book with my old passport number and update it when I get my new passport?

If so, will I still need the old passport at the airport?

You don't even need to provide your passport details yet.

I changed mine and had the old number on a lot of bookings.

No issues at all. If you have a UAE Visa you should bring your old passport with the visa in it.

Make the booking.
It'll show 'Passenger information required'
Don't fill it in, when you get your new passport. Update the info and it'll say 'Passenger information complete'.
