I have just booked one for the summer

can I not choose my seat selection , obviously for a fee of course

You should be able to purchase seat selection. Is the tab missing in your reservation?

easyjet holidays chat bot responded with the following:
You can choose your flight seats for your easyJet holiday for a small fee when you check-in online or via the app, which is available around 30 days before your departure flight.

I have just booked an EasyJet holiday for December. Once confirmed it gives you a holiday reference and a flight rererence. On my phone app I was able to book seats immediately by putting the flight ref in.

All I get on the app after entering booking Ref No and surname is 30 days out you can reserve seats
