If you are able to go off the strip, there are some terrific inexpensive restaurants in LV's Chinatown, which is a bit west on Spring Mountain Road, including Pho Vietnam; there is a very good Japanese restaurant, Koto, on Eastern Avenue in the South; and there are other good finds around the Valley. It kind of depends where you are staying, whether you have a car, and whether you want to drive....

I like LINDO MICHOACAN. One on the east side (Desert Inn) and the other is on Decatur. Or try Guadalajara in Boulder and Palace Station casinos.
Mediterranean food, on Flamingo and Maryland Pkwy, there are 2 or three.
And as far as buffet is concerned, Alladin is good value and good selection for the money.

Lotus of Siam, 900 Block of S Sahara rated as one of the best Thai restaurants in the USA and by many as one of the best values in Las Vegas.

I read this review, pointed out by the reviewer(who is actually an author)'s pal, and took my parents there on our trip to Vegas. The food was so spicy it made Vegas in June feel cool :D

Many of the hotels have Udon restaurants (Japanese Noodles, with soup and vegetables, chicken, etc.). These restaurants are inexpensive and the food is quite hearty and tasty.

I heartily second the Lindo Michoacan suggestion...when I lived in LV, there was only the one on DI...it was excellent. On Fridays and Saturdays, they had a goat stew that was delicious--not on the menu, but if you asked for it, they had it. I'm having some serious cravings now! Viva Mercado's (a couple of locations in town) was also very good Mexican at reasonable prices, just not quite as good as LM.
