Ham museum in Madrid
Museo de Jamon, saw 3 locations,
its a Tapas bar/restaurant, hams hanging on every inch of every wall, in different stages of curing

Every country has a chocolate musuem, but only the web would have a Chocolate Wrapper museum (does that count?) It's a pretty impressive collection.

Mustard museum in Mt Horeb Wisconsin (just west of Madison) - never knew there were so many, many kinds of mustard still being made (and the collection of old tins, containers, ceramics is interesting as well).
