Yum, tuna noodle casserole...this was on our weekly rotation growing up in the Rust Belt.

Tonight it's a chicken teriyaki rice bowl.

I'm ready to make my first attempt at a restaurant style meal at home this weekend.

I'm going to start easy. Made from scratch tacos, refried beans, spanish rice, chips and salsa, and a margarita. Basically copy what I would get at a typical Mexican food restaurant. I'll see how it goes then once I get the hang of things continue to try out new menu items and expand my options.

I'm doing it because I'm looking to save some money by cutting back on how much me and my family goes out to eat while still getting to enjoy food and drinks I would typically order at a restaurant.

Last night: tuna salad over greens (lettuce, cucumber, Kalamata olives, grape tomatoes, spicy pickled green beans, chopped asparagus

Will be having Chuckie's famous pork tenderloin sandwich at his food truck at Sloan Park in Mesa, AZ today. So delicious. (Actually lunch, really.)

Dinner tonight will be homemade ham and bean soup and cornbread muffins.

(The rest will go to church tomorrow )

I could get into a pastrami, swiss and sauerkraut pizza finished with dollops of Russian dressing...

I discovered it at New Years...it sounds weird but is so good.
LMK if you make it.
Mustard and a little mayo, mozzarella cheese, piles of thin sliced deli pastrami and chopped dill pickles sprinkled on top. The pickles really make it pop. The pastrami crisps up in the oven. OMG, I'd kill for some right now.
