Open face sandwich on toasted grain bread, with some hummus, shredded Sue Veed chicken TJ's mustard aioli, tomato, and provolone (melted), along with a few halla pain yo chips.

I'm so tired I could go to bed without dinner. But I need to make whiting tonight, so the plan is to bake it with just salt, pepper, and lemon juice. Vegetable of the night is a medley of carrots, corn, peas, and string beans.
Update and disclosure: this was a bag of frozen veggies from the Dollar Tree, and like the rest of them were super tasty and fresh. The fish was not from the Dollar Tree but also came out nicely with a nice chew to it (not too flaky as I often run into that issue).

I think the South East Asian equivalent is something like kway teow hum (rice noodle squares served in a clear broth with a side of pig organs).... but you'd need to properly clean those organs before I'd eat them.
Lots of organ dishes around the world...

I used to want to try menudo, especially when I was flying through PR regularly, but now that I try not to eat beef it is no longer on my list. Even when I get pho now I get it without the tripe.
Making me want a salad. I haven't had time this week to go to the supermarket, but after going to the Italian place a little under a mile from here (better quality and same price or cheaper) it will be a little more complicated to go food shopping now Maybe I can go Friday afternoon or over the weekend.

I'd like to try authentic menudo... but then again, I have been known to like to try some non-western conventional stuff (and I like eating the occasional durian)...
