This sounds like you would end up with almost chicken ceviche. Usually acids "cook" proteins after a while. I don't get how 24 hours in the juice doesn't result in a spongy texture. I do have some pickle juice in the fridge so maybe I should just try it.

Had to step out to pick up a few things and wandering into a local asian food court. They had a picture of something they called "Taiwanese braised pork rice bowl" so I ordered it to try... it wasn't remotely what was in the picture (there was rice and some greens but the meat wasn't what was presented). It wasn't bad, but not the same... shame...

I don't think pickling liquids are that strong. It might cook the outer bit (as in a mm or so) of the protein, but I don't think it'd be that different (fish maybe being the only one which would significantly change colour).

Pickle juice isn't totally a brine so it isn't as strong as it could be. For whatever reason this usually results in super tender chicken breast!

Anyway...

Dinner at London Lennie's: peel and eat "Old Bay" shrimp, Maine mussels Provencal, one baked clam (all on happy hour except the baked clams)

Breakfast: curry oatmeal

I had something very similar when I was in Nepal, though not with oats. I also did not use any dairy in this and I did not have any onions.

Lunch: Gennessee Cream Ale-marinated baked chicken breast, mixed vegetables (carrots, corn, lima beans, peas, string beans)

Chicken is cooked the same way as the pickle chicken, but marinated in beer instead of pickle juice.

SFO AA Lounge Breakfast of Champions. Hard Boiled eggs on a muffin with cream cheese, pepper, and "everything" bagel seasoning. Seems safer than the eggs and bacon sitting in Oatmeal -type vats. (Or at least safer when the only loo for most of the day is on a plane.)


Sometimes boring is good.
