Huy Fong's just has that perfect balance!

I've noticed the red-capped bottles on the shelves but passed them up. Maybe I'll give it a try for the "more kick" aspect. Thanks.

It was so early that it implied there could be such a thing as too much Sriracha, so I decided it was better left unmentioned. Plus I couldn't find it.

Sriracha hot sauce purveyor turns up the heat


Packing heat: Early on, one of Tran's packaging suppliers told him, "Your product is too spicy. How can you sell it?" Add a tomato base, some friends counseled. Sweeten the flavor to pair it better with chicken, others said. But Tran stood firm.

"Hot sauce must be hot. If you don't like it hot, use less," he said. "We don't make mayonnaise here."

Pricing it right: Tran had just one guiding business principle: "Make a rich man's sauce at a poor man's price." In more than two decades of operation, Tran has kept the wholesale price of his sauce constant, but he would not disclose it. A 28-ounce bottle goes for about $4, depending on the retailer.

"My American dream was never to become a billionaire," Tran said. "We started this because we like fresh, spicy chili sauce."

That means cranking up the chili content of each bottle and making sure each pepper is as hot as possible, Tran said. As the company grew, Huy Fong Foods developed a relationship with a supplier in Ventura County and carefully monitored the entire growing process from seed to harvest.

Now, each chili is processed within a day of harvesting to ensure peak spiciness.

This stuff is awesome. It's great on so many things. They also have a chili sauce that is really good also I've seen.

FYI - The factory now has a free tour, and attendees walk away with a free bottle. The tour started out Saturday only, but now runs 3x Mon-Fri.

Anyone tried these - one of our niece had us running to a # of Asian supermarket in the greater LAX area looking for some to fly back east with us for her, with no luck. But, she finally got some & said they weren't all that great.

And, of course - Heinz Ketchup is adding Sriracha-flavored to its lineup this month, going for $2.69 a bottle according to the New York Post. No thanks, I will pass that one too.

With no trademark, Sriracha name is showing up everywhere


Wander down almost any supermarket aisle and it's easy to spot one of the food industry's hottest fads. Sriracha, the fiery red Asian chili sauce, has catapulted from a cult hit to flavor du jour, infusing burgers, potato chips, candy, vodka and even lip balm.

That would seem like a boon for the man who made the sauce a household name. Except for one glaring omission.

David Tran, a Vietnamese refugee who built the pepper empire from nothing, never trademarked the term, opening the door for others to develop their own sauce or seasoning and call it Sriracha.

There are now a slew of sauces on the market labeled Sriracha, including variations by Frank's Red Hot, Kikkoman and Lee Kum Kee.

The category has helped ignite U.S. hot sauce sales, which have jumped from $229 million in 2000 to $608 million last year, according to Euromonitor.
