Wellington closed?

Any chance it is bottle variation or do you think this is typical of Sauzet's 05 Puligny? I actually still have a fair amount of 2005 White Burg

I think there's certainly chance of bottle variation - which is one of the main reasons why I tend to not age my Bourg blancs past the 10 year mark. The variation even within the same vintage and producer is frustrating.

I think it's also certainly a matter of taste preference. I personally like a decanted ~10 year Bourg blanc for its richness and intense finish, whereas I have some friends who always drink before the 5 year mark because they prefer retaining the acidity/fruit balance.

I tend to drink the better ones after the 10 year mark. I do drink young ones as well especially the 2014s which are very enjoyable!

Are there rules (rule of thumb) for decanting? And how much time decanting is enough versus too much?

Depends on the wine, for some 40mins to an hour or 2hrs is sufficient, while for others, a quick decant and swirl are sufficient.
There is no universal time, but with older wines you do need to be delicate.

I usually do it as a quick swirl or 20mins max.
Maybe I need to drink better wines?

It's more of an aerator. Better than nothing I suppose, but it's not a miracle worker. I have a little aerator nozzle I sometimes use.
I would suggest just going with a regular aerator though.

For an upcoming anniversary on Friday, I bought a bottle of Champagne, Pommery Cuvée Louise 2004.

Lobster to be picked up en route home.

2015 Shea Wine Cellars Block 5

It's so delightful. Wish I had the budget and facilities to buy a case and cellar it properly.
