Homemade braised beef short ribs.

Using a dutch oven, I browned the ribs in olive oil. Once browned, I removed the ribs, replaced the oil and sauteed a puree of onion, carrot, celery and garlic. Once that developed a fond, I added a cup and a half of tomato paste and let that cook for 5 or so minutes, and then added most of a bottle of a decent cabernet sauvignon. Once the liquid reduced by 1/2, the ribs went back in with 2 bay leaves, a bouquet of thyme and enough water to cover, then into the oven at 375 for 3 hours, removing the lid for the last 20 minutes. Almost forgot, salt and pepper at every step. Served over top of lightly buttered egg noodles and alongside a bottle of Gigondas.

I'll make this again, but maybe cut the amount of tomato paste in half and use beef stock instead of water. Or find a recipe that uses stout or a dark german beer...

I had a steak cookout with my Dad last night and I was still craving steak today so I went to Whole Foods and got some fajita sirloin meat and scrambled them with eggs, cheese and spices and ate them on a tortilla.

TGIF, local host drove to Little Saigon for something different this morning, a great summer light lunch @ Westminster, CA plus a quickie pit stop next at Lee's Sandwiches before heading back to LAX: Ch Ba Mu, Chả Gi, Goi Tom, Bnh Hỏi Thịt Nướng, and Bnh Hỏi Thit Bo Nuong.

Too much travel food! Skyclub breakfast and Biscoffs on Delta. Probably good though, I ate a lot last weekend so putting more in might be a bad idea.
