How sad I hear you say..... the center of my life is some flour and nothing much for a week or so.

I hope that this does not become a tragedy. A lot of sourdough bread and pizza are at stake. I hope that I am biga (google!) and equally very poolish (google) !:)

Stupid question but are you sure you want an airtight seal like you have now?

For this shot I am going to faithfully follow Paul Hollywood my hero who says so. He says 3 days before it's first feed and split.

Perhaps it creates a microclimate with just enough air in it to keep it going in a concentrate way?

I guess I'll know soon. I'll probably not resist sniffing it every day ......

My only real point of reference for starter storage is the starter than an ex-gf of mine kept. She is a pastry chef (an amazing one at that) and when we met she had been maintaining her starter for 7 years or so. She kept it in a 5 gallon bucket with a loose lid.

Anyhoo, good luck with it.

I seem to recall there were sourdough waffles too. I'd ask him about it, but he doesn't remember :(

I see there are plenty of recipes on the web, but I can't recommend one from experience. I just remember that there was something really good about the sourdough flavor in pancakes and waffles where regular pancakes/waffles were just sweet. Buttermilk pancakes can be very good too, but sourdough ones rule!
