Balik salmon
 
My craving is not going away...:p

Does anyone know:
1. Can you buy Balik salmon in the U.S.?
2. Is there another product in the U.S. similar to it?
3. Can you buy Balik salmon in LHR (Caviar House?) to take home? Any Customs limit?

In London the Piccadilly Rd location of Caviar House does sell Balik Salmon. Have seen it at the LHR location in T5, but the airport location did not have the same selection and variety as the Piccadilly Rd location.

Can't comment on US customs and if it will be allowed into the US.

Have asked Customs and fish is OK. I'll ask Caviar House on storage.

No one else crazy about Balik? Or do you get enough in F already? ;)

It is very good. I occasionally have it on the way out of LHR at the Caviar House restaurant.

Balik salmon is made by Caviar House and sold at all of their locations world-wide. Note that the price varies by location (sometimes quite significantly, I've seen over 100% higher prices at some locations than others for the same product). The curing process is secret and proprietary, and in 20 years of looking I have not found another source that is as good. Some come quite close and use higher quality fish. In USA/NYC you can try the smoked salmon sold mail-order by Ducasse, by no means the same but comparable.

Where do you see the prices to be higher - LHR? And where is it lower? Do you mean Alain Ducasse?

Every Caviar House location has a different price and they change all the time, based on supply and demand. Often not what you would expect. Last time I flew LHR-HKG the LHR price was about 30% cheaper than the HKG price -- I expected the opposite, but given the emergence of affluence in China and the decline of UK perhaps it isn't a surprise. Quality was identical (I tried some at both locations on the same trip).

Ducasse pricing is completely separate, and generally lower (if USD 100 for a small side of salmon can be called lower).

The salmon comes from Norway, the only thing 'special' about it is the smoking process, which includes 'premium salt' (whatever that is) ... and the hefty price tag :D

I did end up buying a box home from LHR last year. The salmon didn't taste as good as it did in CX F. :D

Having had this several times on CX F, the one distinct difference is the very subtle flavor of the salmon, vs. the over saltiness you'd find in say, salmon served in the Hyatt lounges.

No, but I was there last Thursday. I have been an EXP for several years but this year dropped to Platinum. The lack of access to the BA first lounge is going to result in increased time at Caviar House. Had the balik plate and a glass of Sancerre. Yumm.

I tried some for the first time today ... and have to be honest and say I don't get it at all. I can see that the fish itself is superior. It's texture is first class. But to me it is hopelessly under-smoked.

As an East-ender I believe that Formans London Cure is far, far much better.

I like the fact that it is very lightly smoked, almost sashimi in texture.

Too much smoke, for me, ruins the delicate taste of the fish.

I also like the way it's cut, as opposed to the thin slices you more commonly see.

I agree about too much smoke. But this seemed to have no smoke, in fact no real flavour - just wonderful texture. Ours was supplied (I thought they all were ...) uncut to preserve freshness.

It is very lightly smoked and I can totally see how someone would think it lacks flavor. For me, though, it's about perfect.

I've never actually bought it, only had it on CX. I may well buy some later this year, though.

I suspect that buying it vacuum packed ready for you to cut will be spot on for you - as I can see that it is perfect at what it intends to be. Obviously helps if you have a salmon knife.

I also smoke my own salmon so I guess all of us have our own taste in these things.

In your honor I had scrambled eggs, sliced tomatoes and nova this morning. Yumm!! Unfortunately not Balik, since I was getting them at a deli/bagel shop near my house. They were so good I may make them at home for breakfast tomorrow.

Depending on preparation farmed Atlantic can be superior to wild caught. It's got a lot more fat so with sweeter glazes it melds well. My favorite is king salmon which we get local in California. Closest to farmed Atlantic in terms of fat content. Wild caught koho and sockeye tend to be drier, but do well with a rub on a cedar plank.

If you think Balik is hard to get in the US, try getting it in Canada!

Would gladly compensate someone who might be willing to bring back some Balik for me over the next month or so from Caviar House in LHR.

Anyone?

Is that a legal import? AFAIK into the USA it wouldn't be (unless its cured somehow?)
