SEA-SLC-LHR only 34min connection. Would you take it?

I would. As most people suggested, there's a 99% chance that there will be a schedule change between now and then. SLC Airport isn't that big, so 34 min layover is not impossible as long as the first flight is not delayed. If you have status, you may also try an earlier SEA-SLC standby as there should be multiple flights for that segment.

Everyone is right regarding chances are solid itinerary/equipment will change a handful of times between now and then but whatever you do, be conscious of a potential 25 walk/people mover time frame if you have to get from B to A gates or vice versa.

This. I've made that 35 minute connection, but I wouldn't want to count on it.
More importantly, I certainly wouldn't count on bag(s) making it.
But if it's a good deal and far enough out, as others noted, the schedule will change and you will have other options.

Can you travel one day earlier and still get the good deal? Even without a tight connection, it's risky to plan to arrive the day you need to be someplace far away. For a wedding or cruise, don't even plan to arrive the day before.

You'd probably make the connection. But, leading up to the trip, you may find there is some stress in worrying about whether you're going to make it. And stress is no good. Moreover, I'd probably prefer a longer layover not just to reduce the probability of a missed connection, but also, prior to a long international flight, to have a chance to catch my breath and walk around a little, maybe enjoy a meal, or (if you have SkyClub access) some lounge time. Travel should be at a relaxed pace, with minimal stress. The other thing that can be a pain with a tight connection is if you make the connection, but your checked baggage does not. If you're heading home, that's not normally a big deal. But dealing with missing baggage when arriving in another country is kind of a hassle (speaking from experience).
But, as others have mentioned, you'll probably encounter a "schedule change" that will very likely give you the opportunity to choose a more palatable itinerary.

Nothing booked for next year won't have a schedule change. Book the cheap option and once schedule change happens, book what want for no extra cost.

Personally, I would book it and bank on the schedule change. Even if there isn't a schedule change and you misconnect, there's lots of options to/from LHR via other hubs even on daytime flights the next day. If you misconnected they would probably put you on a flight to JFK which has a daytime flight to LHR and would still get you into London the same day.
The other thing I would strongly consider the cost savings vs. the two nonstop flights from SEA. For economy, I would do the nonstop if it was within $400. Nonstop just makes the whole trip so much easier and you're lucky to be flying out of an airport with multiple nonstops on both Delta/Skyteam and British Airways/One World.
