Will I get Sky Club access in SEA since the flight is to an international destination? Or will the stop over prevent that? When I fly to Asia I always have lounge access.

No, DL excludes the Caribbean from the definition of international destinations for lounge access for Skyteam Elite Plus passengers. So no access in either SEA or ATL.

Thanks for the recent feedback guys, enjoyed the lounge access on my way to ICN and back.
Now a different question: does the 1 guest you get to bring with GM status have to be on the same itinerary or airline? I am flying CDG-PVG-ICN on MU in a few weeks and gf is flying CDG-ATL on AF, can I bring her in as my guest to the AF lounge?

Note: we are both flying the same day, economy, roughly about an hour or so apart

Technically, I believe the restriction is that they have to be departing on a SkyTeam flight.

Correct. They just need to be on a ST flight, not the same one as you.
