I would probably postpone it.

Then are all these people at the sold out properties on a death wish?

Are you?
Even though it is showing sold out, I have a hard time believing that.

From Amazon.

We’re vigorously combating price gouging
Amazon is taking important steps to keep prices fair and protect our customers from those exploiting the current crisis through price gouging. We have zero tolerance for this harmful practice and longstanding policies and systems to protect our customers. Find out what we’re doing.

Pizza sounds good but drinking alone in your hotel room sounds like a weird thing to look forward to

They may just not be taking any reservations now. Do you have anything to suggest they are fully booked other than lack of room availability?

The really vague thread title is something I'd try to not to do

Not worth it. This stupid virus can be anything from a mild inconvenience to death. Stay safe, if not for you but for others.

From the hotel's master thread in the Hilton forum ...

Arizona Biltmore, A Waldorf Astoria Resort {US-AZ}

Anyone heard anything about it closing for a while? I've noticed they're not accepting reservations until Sunday night of Memorial Day weekend and we booked 3 nights starting the night before they are selling rooms.

Lacking hard evidence? Sure, but intuitively I have to believe they are partially or fully closed through the end of May.

If you need a change of scenery, would you consider a nearby hotel with pool and pizza delivery? I’m antsy too but I wouldn’t do it. Especially the airport.

Likely they are closed, or gearing up for it.

Is the RC in Dallas still open? Go there if you have to get away. Decent club lounge. We go there for staycations once in a while.

I still wouldn’t do it now.
