Because it is the most direct route, and on a trip that is that long one doesn't want to spend a lot of time trying find a different route.

Yes. There are specific route paths over the country that are commonly accepted for commercial traffic. I wouldn't necessarily recommend picking different routes over those countries and/or flying too low, but the commercial routes are very safe.
