7:00pm: Claypot dinner - claypot is a cooking style using clay earthenware cooking pots. It is a local favourite in the winter. Famous is the lamb/goat/mutton stew as well as rice cooked in the pot with toppings. It is meant to add warmth to the cold winter days. Rice cooked in claypots will absorb the flavour of the topping as well as a crispy crust at the bottom.
For the adventurous snake soup is another winter delicacy.

Okay, my plans have solidified a bit more - I'm now going to arrive from Macao on some ferry Tuesday Jan 15th, staying at the Renaissance, dep Jan 18th on CX 739 at 11:35am. Definitely still in for the horse races on Wednesday, and likely up for outings on the other days.

Still need to find something to do on the 17th. Was going to pitch the idea of a Macau day trip but since nomadic.relief will have just come from there that may not be the best thing

I thought the plan was races on Wednesday evening the 16th?

I'm still arriving late 15th and staying by the airport, planning on Ngong Ping/Lantau/Giant Buddha during the day on the 16th before heading in to town.

Night market/craft brewery sounds great to me! Currently booked at the Mira in TST but subject to change.

Would it make sense to do Lantau Jan 16 during the day for those that are interested.

Updated ideas, please suggest any modifications:

Jan 16

Night at the races. Dinner en-route to Happy Valley race course. There are places walking distance to the course that we can dine at. I am open to suggestion for cuisine.

Jan 17
Day: open to suggestion
Hot pot dinner and Temple St night market. Maybe a craft microbrew before hot pot?

Jan 15 dinner suggestion:

Since Iking is staying in Island West there are some clay pot specialty restaurants near there that we can do clay pot dinner if people are interested.

Ill be at the Conrad. I get in around 5am Wednesday, so theoretically can join in with a day trip, or partial day trip, depending on meeting time, place etc.

I am planning on heading to Macau on Jan 17 (Thursday).

I want to take the new shuttle bus that goes across the new 55km (!!) oversea bridge to Macau and probably ferry back.

For those interested in proper ramen Butao does have a location in Macau as a possible lunch stop there for the day trip

I am definitely in for Hot Pot on night of Jan 17 with the group back in HKG.

My guest house is in TST for reference (and also right next to another Butao Ramen shop)

I stay in the west end every time I go to Hong Kong and didn't realize hotpot was such an item there. Looking forward to trying it there. Can never have too much hotpot so Jan 15 and/or 17 works for me . A friend from Hong Kong was just telling me that there's an "advanced" version of hot pot? Chicken pot?

With the MTR completed it's easy to get around. Sai Ying Pun is the MTR stop; and Water St. is the tram stop for the Courtyard.

Looks like I will be in for mostly the evening activities.

I have been to Lantau and done NP360 in the past (well worth going to!!), but if possible, I'd love to join for dinner en route to Happy Valley. If that gets tricky to coordinate, I am fine with just meeting up at the track.

On Thursday, seems like there is consensus for an excursion to Macau (also cool), but I will have jumped the gun and just come back from there, so again, meeting up in the evening for hot pot seems like the plan for me. I am more than happy to check out some microbrews while I wait for the crew to return ... and if in the end no one makes it back in time for dinner at least I'll be well situated to drown my loneliness.

Any suggestions on a traveller's SIM card? I know if I were flying to SIN first there's one I could get that would cover a good portion of Asia for 10 days, but starting in TPE or even HKG I am not sure if there is the same thing on offer.
