Unlike other programs, Choice doesn't necessarily limit the kinds of rooms you can book with points. So if a hotel has an expensive suite, it still might bookable on points, and if so it requires no more points than the simplest room! It's up to the hotel whether they make all rooms available on points or only some of them, so you can't count on this necessarily working at every hotel.
However, unlike other programs, Choice changes redemption rates at each hotel several times a year. (It's all documented on each hotel's website, for the next few months at least.) So the best value for exactly 8000 points is when certain European hotels go "on sale" (8000 points per night for a few months):

The price of Choice redemption nights for Nordic Choice properties is on the whole very stable. The peak/off-peak and promotional price variations are a rarity (if they exist at all) for the Nordic Choice properties. What has changed is that a growing proportion of these properties have reduced which room types are available for point bookings.
