Are all HKG lounges usually open Xmas day?

we do celebrate it. Just not like how westerners celebrate xmas. Xmas eve is also known as the night you lose ur virginity.

but anyways. Cx lounges are open 365/7/20 (close between 0130-0530/0600 on most days)

Slightly OT, are the shops normally open in HK on 31st December?

I know that lounges will be, but was thinking of popping into town for a bit [and in particular PYE store, Central].

That was a very good day!

Many shops in HK stay open 365 days a week. It used to be difficult to find food/shopping on CNY Eve/1st-2nd day but many places now stay open.

Right, most locals leave a day or two ahead of time. But CX always issues notices reminding passengers to arrive at the airport early over public holiday peak season periods.

Shops in HK are typically open EVERY DAY OF THE YEAR except the first day of Chinese New Year (and the 2nd and 3rd day for some smaller shops).

Except on T8+ days. Then you just sit at home and do nothing.
