I can't read Chinese, but have always thought this one is more the "cha jiong mien" sauce with fermented bean paste, as opposed to real "dan dan mien" with peanut sauce.

I personally can prepare 炸酱面 from scratch. I like ground pork in the sauce and equal parts of spicy and sweet black bean sauce. I use medium-width flour noodles and add sliced cold cucumber on top. Excellent stuff! |
