is that Australia flights still have enough 33K's to fly ADL, SYD, BNE, PER after conversion done? or changing to 35G, 35J and 77K mix?

CX110/111 to SYD is changing to 359 now, happy to see more coming. AND i do hate their high density 77K Y seats.

What I found interesting is that their J cabin to Australia is still relative full, Y is wide wide open empty, maybe they scared away all the tour group bookings?

For SYD and MEL, I keep noticing their premium cabins get sold out, and I think cargo should be a worthwhile business too. But their back cabin can't be sold full for love or money.

On those routes, will it benefit CX to run a premium-heavy 788 (if they had them)?

but CX161/162, HKG-ADL, the 4-weekly flight HKG-BNE, CX137/136 are still using A330 (33K). Maybe there are not enough aircraft after conversion to 33J.

The tour groups are now booking on QF128/127, QF118/117, or even VA flights instead of CX flights......

So maybe we will see a third daily flight to SYD for QF soon?

the bi-lateral agreement on Flights from HKG to SYD / BNE / MEL allows only 70 flights per week.

No they're not, not sure where you're getting this from? QF downgauged to A330-200s and their traffic is collapsing. By comparison CX Australian traffic is holding up well, likely since they can fill their planes up with connections.

“Protests in Hong Kong will negatively impact the [Qantas] Group’s first half profit performance by A$25 million, with ongoing capacity reduction in place to minimise the second half impact,” the company said in a filing to the Australian Stock Exchange."

QF is well below that limit. If they want to add flights, the issue isn't the bilateral but favourable slot timings and no chance of profitability. The reality is Qantas is suffering massively on HK routes and I'd be surprised to see VA last another 2 years.

Looks like CX659 HKG-SIN 11/Dec may be the first 33J flight. The aircraft registration is B-LAP and has flown from XMN the day before.
