Adults All Inclusive Recommendations for parents age >65
I am looking for a last minute vacation for my parents who are fit 70 year olds, leaving from Toronto, Canada. Hoping for a warm destination but something more unique than they typical all inclusive resorts. Any recommendations appreciated.

Here is a list from Tripadvisor on what TA considers the best adult all inclusives in Punta Cana.

I have stayed at several Iberostar Grand properties and I have stayed at several other all inclusives in the Punta Cana area. My favorite is The Level within the Melia Punta Cana Beach. This is one of the resort within a resort concepts. When we stayed there, no one under 16 was allowed. It has a separate pool, a large separate beach area and access to their top restaurants included in the room rate. IMO it is the best adults only all inclusive value in Punta Cana. We were there during their peak (Spring Break) and we found The Level to be quiet, intimate and very exclusive. I prefer the location as it is very close to a shopping center (walkable) and a short/cheap cab ride to the El Cortecito area in Punta Cana. This is a safe tourist oriented area and has great shops, restaurants, etc if your folks want to go off property.
The Iberostar Grand Bavaro is a very nice resort. It also is close to El Cortecito. But when I booked my wife and I into The Level, the Melia property was almost half the price of the Iberostar (during Spring Break). I haven't priced them out recently and we haven't been back to Punta Cana since the start of the pandemic, so as always, YMMV.
