I've found its pretty safe for about an hour for a quick freeze, then into the fridge, but best have a timer set to make sure you remember.

I am going to guess that you have not worked as a Sommelier! The rapid chilling plays havoc with the bubbles as well as the flavour and aroma.

(There is a reason I have expensive temperature controlled refrigerators)

Ah yes, I was assuming that was also the reason (and it was cheap cava, and I don't do it often). I assume the freezer sleeves have the same effect. Wouldn't be stuck in a bucket of ice have the same effect too? (this is definitely getting Off Topic)

Swapping Chelsea and Greenwich?

So off topic, but .... Less temperature difference , its a bucket of ice+water, so cooling but not freezing, much better for the bubbles and flavour

At least there might be some hope. The only time that I've had access thus far, I gave feedback regarding how it was a deterioration from the FL to Greenwich.

I'm in the air talking to the crew.
1. They have noticed greater demand for food after takeoff.
2. Pilots have moaned about Chelsea.

I think someone is mistaken. They wouldn’t be in Chelsea if traveling for work or on staff travel - unless they happen to be a GGL.
