I uploaded my documents yesterday and the status looks like this:

Is it supposed to show the documents I uploaded in each section or is this how it normally looks when you have uploaded the documents and they have not been verified yet?

They must have updated the system. My window opened up exactly 72 hours before the LHR departure which gave them 40 hours to validate everything. It all fell into place about an hour before check in opened for the first leg.

To also provide another data point - documents have just been verified, took about 6 hours from submission.

Yes, you get a green tick when it's all checked out and another email is sent to the address you put in

Data point.
Uploaded documents at 4am this morning for 7 passengers. Notification of successful verification came within 10 minutes for all pax. From this I would guess that the documents are also being verified in a country in Asia (India?), suggest for a rapid response try uploading the night before and hopefully you'll get results by morning.
Note that going through MMB you have to upload documents for each passenger separately although my submission with the whole party's documents only got delayed a couple of minutes while they had a laugh at me failing to read the instructions.
Online checkin completed successfully and boarding passes issued.

One of the documents requested for Spain is QR code from Spanish health declaration. But you can't get QR code without seat #. And you can't confirm seat # until checked in. But to check in you need to upload documents. Around in circles we go.

Not in my experience as I and many others here get seats allocated on buying tickets so the problem doesn't arise. I would suggest putting in a dummy seat like 15A or 1A if you're so inclined and then update the Spanish form after you've checked in or just leave it. Seats get changed after check in for operational reasons, sometimes passengers don't make the flight after checking in and the Spanish authorities get handed a manifest with seat numbers and passenger names on arrival for this reason.

I did the docs submission online (took ~3 hours for confirmation), wife didn't - made almost no difference as long as you have the relevant docs available at check-in. (We're able to select seats in advance).

Submitted Docs at 1700 yesterday for a Saturday afternoon flight, no response as yet, no biggie if it doesn't get confirmed, in the front row of CE so First Wing check in can sort it out.

Submitted 36 hours ago. Still no response one way or the other. And OLCI opens in just under two hours. Guess that means no OLCI option for me and having to waste time at the airport…
UPDATE: All good in the end. Confirmation arrived about an hour before OLCI opens. Cutting it a bit tight, though.

Some questions- probably heading to Greece- oh boy do I feel such a flying rookie now, I’ve got to get my wings back!
I know we need their PLF for Greece which you do at least 24 hours before, but for BA, are you uploading photos of documents or what?
Its required for every international flight - right?
Scots don’t have app verification of vaccination status just letters. Again, does uploading a photo of this suffice?
Anything else we need (I know we don’t need tests for entry to Greece)
Coming home, do any of the documents carry over (eg vaccination certs) or do we have to upload all again
