Hi,
As Infinite Possiblities said you have either option at check in at DUB.
I have been given the option of bags being checked through EDI-LHR ( overnight) -USA at EDI check in with no problems getting it tagged just to london.

As many already posted - yes, you can check bags through and leave them overnight in LHR. The crucial question if you really would like to leave your belongings overnight in a major airport?
Having learned the hard way how bags might be easier to carry (diplomatic euphemism) after letting them stay overnight in LHR, MIA and JFK, I personally never do that anymore.

BA is explicit on this point. It is asked routinely, but the answer is simple. The only issue is that with an overnight connection, one may have one's bags at the connection point, whereas the general rule is that bags will not be short-checked.
"If you have booked all your flights under one booking with the same ticket number, you only need to check in your bags once when you start your journey then collect them at your final destination."
