Hungary is a no-go zone, as much as I’d like to see Budapest.

Ah! I see Italy is not off the shelf!
So, you could go to Bologna, the city itself is lovely or get the train (about 90 mins I think) to a lovely seaside resort on the east coast called Censenatico.
Or, go to Naples and then down to Sorrento or the Amalfi Coast - add in a day trip to Capri

Sicily is in the exclusion list We were there for a week in October last year: Palermo, Catania, Siracusa, Taormina.
Naples is an idea, however my OH has been twice already. We'd both love to go to Procida though.

A vote for Bilbao (BIO), I went last summer for a big birthday, I think on a recommendation that I read here on FT. Easy quick one-hop trip; the museum, long walks, day trip to San Sebastian and lots and lots of great food and very cheap wine.

Given that this is FT, I'm surprised that nobody has yet mentioned NQY.
It's not outside the UK. Neither good weather nor >20-degree temperatures are likely. And BA doesn't fly there.
