1 - Yes (NB: You've quoted mileage/cash for either a one-way first class ticket or a return economy ticket)
2- No - that's not a stop-over - a stopover has to be on route!

It's both one-way First Class redemptions. Thought that about the second one. so it would have to be two separate bookings HKG-SIN-SYD and then SYD-SIN-BKK-LHR?

Yep - that would work.

LHR- SIN - SYD return for 100,000 + £ and tax return plus SIN - HKG for 20000 + £ + tax return should do the same trick.

Have fun doing the math.

and your math is wrong and more expensive than the three one way tickets route.
