Thai Hotels Double/Triple question

While trying to book hotels for an upcoming trip to Thailand I've noticed that most hotels have a significantly higher rate for a triple than a double. They say this includes an extra bed. If we have 3 people but only require two beds in the room does anybody know whether hotels care if you book a double/twin instead?

Thanks!

Is breakfast included in the room rate? If so that may explain some of the cost differential...

I'd presume a triple sold as such would be larger than a normal twin/double and hence more expensive. Three people in a twin is probably not a good idea because the beds are usually not sized for two...

You might want to consider booking a double and asking for an extra bed, most hotels have some portable setups that can be arranged on demand.
