For TransAtlantic on AA would you prefer A330-200 & A321 or 787-800 & 737-800?

AA change their schedules (including aircraft types) on what can seem like a weekly basis, particularly for a flight so far away. It would seem unwise to hedge your bets on anything in particular.

Barring a major reorganization of the AA system, it will almost certainly be the aircraft types listed.

I've done multiple trips between PHX and Europe connecting at PHL. The domestic legs have been on any of the Airbus aircraft (319-320-321) and even occasionally on the B757. So yes, it is very probably that the PHL-SAN aircraft could change. It also wouldn't surprise me if the times shift enough to warrant an entire itinerary change.
