AA Boeing 767-323ER (31 in Fleet)
There are urgently two variants of Boeing 767-323ER used on DFW - Hawai'i flights:
Boeing 767-300ER "model 1": 30 J/F angled flat "NGBC" seats in five rows laid out 2 x 2 x 2 across; 28 Main Cabin Extra / MCE stats in 2 x 3 x 2 (other than row 17, 2 x 2 used for crew rest on long haul sectors; 160 Main Cabin / Economy seats with 31" seat pitch. Boeing 767-300ER "model 2": 28 fully flat Thompson Vantage seats in seven rows laid out 1 - 2 - 1 with all aisle access; 21 Main Cabin Extra / MCE stats in 2 x 3 x 2 (other than row 17, 2 x 2 used for crew rest on long haul sectors; 160 Main Cabin / Economy seats with 31" seat pitch. It has been rumored the seven "NGBC" aircraft will be retired relatively soon.
The "CIP" variant with new J/F seats is prioritized for transatlantic routes due to the Joint Business Agreement with AA, AY, BA, IB. CIP aircraft scheduled for Hawai'i service may have old "NGBC" types substituted for various reasons up until time of departure.
As of 04 Jun 2017, 24 aircraft (77% of the of entire active fleet of 31) have been converted. These include N342AN, N343AN*, N344AN*, N346AN*, N347AN*, N348AN*, N349AN, N350AN*, N379AA, N381AN, N384AA, N385AM, N388AA, N389AA, N390AA, N391AA, N392AN, N393AN, N394AN, N395AN, N396AN, N397AN, N398AN, and N399AN*.
The following 7 aircraft (23% of the of entire active fleet of 31) have NOT been converted: N369AA, N373AA, N376AN, N377AN, N380AN, N383AN, N387AM.
The following aircraft have been retired (as of 30 Mar 2017): N345AN, N351AA, N352AA, N353AA, N354AA, N355AA, N357AA, N358AA, N39356, N359AA, N360AA, N361AA, N362AA, N363AA, N39364, N39365, N366AA, N39367, N368AA, N370AA, N371AA, N372AA, N374AA, N7375A, N378AN, N382AN, N386AA.

My trip last year, of course, originally had the CIP layout in F but we were ultimately in a non-CIP aircraft in both directions. Honestly, for what ends up being a 7-7.5 hour domestic flight, the non-CIP aircraft was just fine for me. While I do sympathize with those here that have health or other medical problems, those are some serious issues if you cannot remain seated upright for the duration of about 8-9 hours (all told when incorporating boarding and taxi times), and you are likely severely restricted in terms of where you can travel regardless.
And, despite being only an hour or and hour and half longer in duration, the DFW flights receive a vastly superior product compared to what is offered via PHX, and more than double the number of premium seats. The 772 being rotated onto the routes will only improve the experience. And I know this never makes anyone feel any better, but just compare AA's offering to what UA is flying out there on their 772s, which are the non-ER version and are literally the oldest 777s in the world. Operated in a 2-3-2 domestic F config with absolutely no IFE, not even overhead CRTs or even in seat audio (only power and wifi offered). AA's 772s will absolutely blow these out of the water, so we should be thankful for our shades of relatively yellow grass over here at AA.

Five 767s are being retired in August/September per AA's latest fleet plan, leaving just two non-CIP 767s, which will be parked, along with two CIP 767s in the fourth quarter. So it really depends on when in September you are flying to Maui. I'd say the odds are probably better than if you were to travel today.

American Airlines 767 HNL-DFW
I'm in J HNL-DFW, a 1-2-1 lie-flat configured 767 red eye. I know there is another,angle-flat configuration, 2-2-2, and am wondering whether AA sometimes substitutes versions?
If an aircraft swap was needed, would AA be more likely to substitute another 1-2-1 cabin in a 777 or 787, or go with a 2-2-2 767?

This swap happens all the time, and the DFW<>HNL route is still technically domestic so they prefer to put the older planes on this route rather than on international routes.

Yes, check out the American Airlines threads on this topic for details. There are only 7 767-300's in the AA fleet with the old angled lie flat seats. 2-2-2 configuration in FC. Those all are scheduled to be retired by 2018. And AA is adding a 777-200 starting July 05 on certain flights to HNL and OGG (and return) for the summer season.
So, when you are flying and what specific flights will also help determine your aircraft type.
Also, it is highly unlikely AA would put a new 787 on the Hawaii DFW routes at this time.

Since it's so far out, wait and see what aircraft AA schedules in January. Last winter (December, January, and February) AA added a 777-200 to the DFW Hawaii route because of the holiday/winter season. In short, AA might switch your aircraft from a 767-300 to a 777-200 and then you have no change fees involved.
Personal experience, our next trip is next month (July) flight #123 and #8 DFW-HNL-DFW. I bought the tickets in January with $$$ and miles. We were originally scheduled on a 767-300, but AA switched the flights to a 777-200. All I had to do was go in and re-choose our seats.
